So, Bobotie (bow bow tee) is a traditional South African dish.
This dish is nothing like it.
Apparently, I find it impossible to follow a recipe.
I wish this dish looked as good as it tastes.
1 cup dry kamut, cooked
2 tbsp olive oil
1 onion, chopped
1 tbsp curry powder
1 lb ground round
8 dried apricots, soaked and chopped
salt and pepper, to taste
1 1/2 c veggie stock
1/3 c apricot jam
1/3 almond butter
1 tbsp lemon juice
1/4 c sliced almonds, toasted
- Saute onions on low until soft. Add curry and stir to coat.
- In a separate bowl, combine stock, jam, s&p, almond butter and lemon juice. Blend well.
- Add apricots and stock mix to onion mix, cover and heat through.
- Stir in cooked kamut, sprinkle with almonds and serve.
This stuff is SO FILLING. Half a cup and you’re totally satisfied.
Oh, and the kamut takes FOREVER to cook. ~40 minutes if you’ve soaked it overnight, 1 1/2 hours if not. If you’ve not got the patience or the time, substitute with your favourite whole grain.
